Christmas Ham and Cheese Pies | One Pot Chef



My Christmas Ham and Cheese Pies are great for Christmas parties or using up leftovers after Christmas. Puff Pastry is cut into circles and filled with shaved ham, chopped Brie cheese and a little cranberry sauce. Baked until golden and puffed, these wonderful pies are best served warm. Easy to make, budget friendly and perfect for those will only a little bit of time for baking this holiday season - Try it today :)

Ingredients:

4 Sheets of Frozen Ready Rolled Puff Pastry (thawed)
100g of Thinly Sliced or Shaved Ham (I used Honey Ham)
200g of Brie (rind removed, chopped into small chunks)
3 to 4 Tablespoons of Cranberry Sauce / Jelly
1 Egg (Beaten)
Spray Oil (for greasing muffin pan)

Preparation Time: About 15 minutes 
Cooking Time: About 20 to 25 minutes

My Favourite Slow Cooker Beef Stew | One Pot Chef



My Favourite Slow Cooker Beef Stew is one of my all-time favourite dishes. Easy to make and perfect for anytime of year, this stew features potatoes, carrots, herbs, spices, a rich savoury gravy and succulent slow cooked beef cheeks. Serve with some crusty bread for a delicious, filling meal - Try it today :)

Ingredients:

1kg of Beef Cheeks (or any cut of meat, diced into chunks)
1/2 Cup of Plain Flour
Salt and Pepper
4 Large Red Potatoes (diced)
3 Large Carrots (peeled and diced)
3 Celery Stalks (trimmed and diced)
1 Small Brown Onion (peeled and diced)
2-3 Cloves of Minced Garlic
2 Tablespoons of Tomato Paste
1 Tablespoon of Smoked Paprika
1-2 Cups of Frozen Peas
4 Cups of Liquid Beef Stock (1 Litre)
1-2 Tablespoons of Worcestershire Sauce

Preparation Time: About 15 minutes 
Cooking Time: 8 hours on LOW setting

Red Velvet Chocolate Chip Cookies | One Pot Chef

1/2 Cup of White Sugar
1/2 Cup of Brown Sugar

1 3/4 Cups of Self Raising Flour
250g of White Chocolate Chips

Holiday Stuffing Balls | One Pot Chef



Holiday Stuffing Balls is my take on the classic Sage and Onion Stuffing served as oven baked balls that can be eaten as a side dish or a holiday snack! Breadcrumbs are combined with onion, celery, parsley, sage, thyme and mushroom soup, then rolled into balls. Baked until lightly crisp on the outside and moist and fluffy on the inside, these irresistible morsels are bursting with flavour. 5 Cups of Dried Breadcrumbs (store bought, about 500g)
1 Onion (finely chopped)
1 Cup of Finely Chopped Celery (approx. 4 short stalks)
50g of Butter

1 Teaspoon of Dried Sage
1 Cup of Freshly Chopped Parsley
Salt and Pepper
1 Can of Cream of Mushroom Soup

Slow Cooker Chicken Teriyaki with Vegetables | One Pot Chef



This Slow Cooker version of Chicken Teriyaki with Vegetables takes all the fuss of cooking the modern classic dish! Cooked all in one pot, it’s as simple as adding chicken pieces to the pot, pouring over the home made teriyaki marinade then switching on the pot. Add in some vegetables and the meal is complete. 1kg of Chicken Thigh Fillets (skinless and boneless)
1/2 Cup of Soy Sauce
1/2 Cup of Honey

1/4 Cup of Rice Vinegar
Freshly Cracked Black Pepper
1/2 Cup of Water
2 Tablespoons of Corn Flour (aka Corn Starch)

1 Zucchini

Cooking Time: About 4 hours (HIGH) or 8 hours (LOW) + 30 minutes extra

No Bake Pumpkin Pie Cheesecake | One Pot Chef



My gorgeous No Bake Pumpkin Pie Cheesecake combines two classic dessert recipes to create one simple, creamy seasonal dessert that anyone can make. Pumpkin is combined with cream cheese, whipped cream, brown sugar and pumpkin spice, then carefully smoothed onto a crispy cookie base. Chilled until set, this cool and refreshing dessert is perfect for the coming holiday season - give it a try today!

Ingredients:

2 x 250g Packs of Philadelphia Style Cream Cheese (room temperature)
250g Pack of Plain Sweet Cookies (crushed)
100g of Butter (melted)
500g of Pumpkin (steamed and mashed until smooth, room temperature)
1/2 Cup of Brown Sugar
1/2 Cup of White Sugar
1 Teaspoon of Vanilla Extract
1 Tablespoon of Pumpkin Spice (aka Mixed Spice)
2 Cups of Whipping Cream (whipped, about 500ml)

Preparation Time: About 20 minutes
Chilling Time: About 3 hours (preferably overnight)

NOTE: This is a soft-setting cheesecake. For a slightly firmer cheesecake, place in the freezer for 30 to 60 minutes prior to serving.

Easy Slow Cooker Butter Chicken | One Pot Chef



Easy Slow Cooker Butter Chicken is a simplified version of the classic curry dish. Succulent chicken pieces are combined with herbs, spices, natural yoghurt, coconut milk and butter, then slow cooked until tender. Serve with rice, noodles or vegetables of your choice, this no-fuss recipe is great for weeknights or as an alternative to expensive takeaway orders - Try it today :)

4 Large Chicken Breasts (skinless, boneless - diced into chunks)
1 Large Brown Onion (diced)
1 Tablespoon of Curry Powder
1 Tablespoon of Garam Masala
1 Teaspoon of Chilli Powder (or more if desired)
3 to 4 Cloves of Garlic (minced)
1 Cup of Natural Unflavoured Yoghurt

Super Simple Strawberry Ice Cream | One Pot Chef



My Super Simple Strawberry Ice Cream has only 3 ingredients, doesn’t require any expensive ice cream machines and doesn’t even need churning. Just mix, pour and freeze! Fresh juicy strawberries are combined with whipping cream and sweetened condensed milk to make this super easy ice cream that anyone can make - give it a try today!

Ingredients:

500g of Strawberries (roughly chopped)
600ml of Whipping Cream (any cream suitable for whipping will be fine)
1/2 a Can of Sweetened Condensed Milk (about 200g)

NOTE: If your Ice Cream is too hard to scoop, simply leave it on the counter for a few minutes to soften :)

Preparation Time: About 15 minutes
Freezing Time: About 4 to 6 hours (preferable overnight)

MAKES APPROX 1.5 LITRES OF ICE CREAM

3 Ingredient Macaroni and Cheese | One Pot Chef



Made all in one pan, this fabulous 3 Ingredient Macaroni and Cheese is easy to make, is bursting with a big cheesy flavour and only one pan to wash up! Milk is boiled then used to cook the macaroni, then a big dose of Red Leicester ultra sharp Cheddar Cheese is mixed in to make a glorious thick cheese sauce, Adults and kids will love this simple but delicious version of the classic childhood favourite - Try it today :)
