Slow Cooked Vegetable Curry | One Pot Chef



ONE POT CHEF COOKBOOKS - PAPERBACKS AND EBOOKS:

Slow Cooked Vegetable Curry is a hearty, flavour packed main meal dish that is vegetarian and vegan friendly. Featuring all your favourites including sweet potato, cauliflower, onion, garlic, ginger, coconut milk and a delicious mix of herbs and spices that is guaranteed to keep everyone happy - give it a go!

INGREDIENT LIST:

600g of Sweet Potato (peeled and diced into 1cm pieces)
400g of Cauliflower (about 1/2 a small head - cut into florets)
1 Small Brown Onion (diced)
2 Teaspoons of Minced Garlic
2 Teaspoons of Minced Ginger
1/4 Cup of Mild Curry Paste (I used Korma Paste)
2 x 400g Cans of Chickpeas (drained)
400g Can of Diced Tomatoes
1 3/4 Cups of Vegetable Stock
50g of Baby Spinach Leaves
1/2 Cup of Coconut Milk
Salt and Pepper
Vegetable Oil
Rice (to serve)

NOTE: This is a MILD curry. To heat things up, use a hotter curry paste or add additional spices to suit your personal taste ;)

Preparation Time: About 20 minutes 
Cooking Time: 4 hours on HIGH setting or 6 - 8 hours on LOW setting

Mango Chicken Salad | One Pot Chef

100g of Mixed Salad Leaves
1/4 Cup of Lime Juice
1 Small Red Chilli (finely chopped)
1 Tablespoon of Coriander / Cilantro (Finely Chopped)
2 Teaspoons of Soy Sauce
2 Large Mangos (thinly sliced)
1/2 a Roasted Chicken  - about 2 cups (skin and bones removed, meat shredded)
Freshly Cracked Black Pepper (optional)

Preparation Time: About 15 minutes 


SERVES 4 (as a main meal - Serves 6 to 8 if used as a side dish)

Tuna and Avocado Quesadillas | One Pot Chef

Tuna and Avocado Quesadillas is a delicious lunchtime treat, inspired by the classic Mexican dish. Tortillas are sandwiched together with mashed avocado, tuna, baby spinach and cheese. Pan fried until crisp and golden, these quesadillas are quick to make and easy to adapt to suit any taste preference - give it a go!

1 Large Avocado
2 Tablespoons of Lemon Juice
Salt
400g Can of Tuna (drained and flaked)
50g of Baby Spinach Leaves
1 Cup of Grated Cheddar Cheese (or cheese of your choice)

Preparation Time: About 5 minutes 
Cooking Time: About 15 minutes

MAKES 4 (serves about 4 to 6 people)

Jam Donut Tray Bake | One Pot Chef

1 Cup of Buttermilk (or thin runny yoghurt)
1 Teaspoon of Vanilla Extract
4 Tablespoons of Strawberry Jam
2 Teaspoons of Water
2 Tablespoons of Butter (melted)
1-2 Tablespoons of Cinnamon Sugar

Whipped Cream or Ice Cream (to serve)

Preparation Time: About 20 minutes
Cooking Time: About 35 minutes
