Microwave Christmas Pudding - RECIPE



Christmas Pudding is a traditional Christmas dessert. This microwave version is a quick and easy substitute for the traditional boiled / steamed pudding, but tastes just as good as the original - give it a go!

INGREDIENTS IN THIS DISH:

500g of Mixed Dried Fruit
1/2 Cup of Brandy (or similar liquor or orange juice)
150g of Butter
1/2 Cup of Brown Sugar
2 Eggs
1 1/2  Teaspoons of Mixed Spice
1 Teaspoon of Vanilla Extract
1/2 Cup of Cranberry Sauce (or Apple Sauce)
1/2 Cup of Plain Flour
1 1/2 Cups of Fresh Breadcrumbs

NOTE: You can make the pudding up to 1 day ahead. To reheat, turn pudding out onto a plate and microwave uncovered for 10 minutes on 30% power until warmed through.


Preparation Time:  About 15 minutes
Cooking Time: About 45 minutes
