Cheater’s Mini Apple Pies | One Pot Chef



Cheater’s Mini Apple Pies is a no-fuss, simplified version of the classic dessert! Pie apples are combined with brown sugar and cinnamon, then baked in an envelope of puff pastry. Topped with cinnamon sugar, these gorgeous little pies can be served hot or cold, or even frozen for later use - give it a try today!

Ingredients:

3 Sheets of Frozen Ready Rolled Puff Pastry (thawed)
800g Can of Pie Apples
1/4 Cup of Brown Sugar
1 Teaspoon of Ground Cinnamon
1 Egg
2 Tablespoons of Cinnamon Sugar

Preparation Time: About 10 minutes
Cooking Time: About 20 - 25 minutes

Pulled Chicken Mini Tacos | One Pot Chef



My Pulled Chicken Mini Tacos are quick to make, bursting with flavour and perfect for serving as party food, as part of a snack platter or for good old fashioned Taco Tuesday! Tender Pulled Chicken, cooked in tomato, honey and smoked paprika is served on soft or hard taco shells with your choice of toppings. So delicious, you’ll want to make these all the time - Try it today :)

Ingredients:

1kg of Chicken Thigh Fillets 
1 Tablespoon of Tomato Paste
2 Tablespoons of Honey
1 Tablespoons of Smoked Paprika
1 Clove of Garlic (finely chopped or minced)
Salt
1 1/2 Cups of Water
Taco Shells (I used soft and hard “stand and stuff” mini taco shells)
Toppings of your choice (I used guacamole, sour cream, tomato and coriander)

Preparation Time: About 10 minutes 
Cooking Time: About 50 minutes

Mini Lemon Cheesecakes - RECIPE

Mini Lemon Cheesecakes are a delicious dessert, perfect for dinner parties. A crunchy cookie base is filled with a smooth, lemon flavored cream cheese mixture and chilled until set. No baking required - you won't believe how simple this is to make - Give it a go!

INGREDIENTS IN THIS DISH:

300g Plain Sweet Cookies (crushed, I used Butternut Cookies)
50g Butter (melted)
500g Philadelphia style Cream Cheese
395g Can of Sweetened Condensed Milk
Juice of 3 Small Lemons (about 1/2 a cup)

I highly recommend the use of a silicon (bendy) muffin pan ;)

Preparation Time: 10 minutes
Chilling Time: About 3 hours (or until firm and set)

Mini Sausage Rolls

Mini Sausage Rolls are the perfect finger food for your next party. Sausage meat, onion, carrot, herbs and spices are combined and enveloped in a layer of flakey puff pastry. Delicious on their own or with your favourite dipping sauce. Give it a go!

4 Sheets of Frozen Puff Pastry
1 Brown Onion (Finely Chopped)
1 Carrot (Grated)
1 1/4 Cups of Fresh Bread Crumbs (About 3 Slices of Bread)
1 Egg (Beaten with a little water added)
2 Tablespoons of Tomato Sauce (Ketchup)
1 Tablespoon of Mixed Dried Italian Herbs
Salt and Pepper (to season)


Makes about 40 Mini Sausage Rolls

Preparation Time: 10 minutes
Cooking Time: 20 minutes per tray

Easy Mini Pizzas (Made in 30 Minutes or Less!)



Easy Mini Pizzas are fabulously simple snack. Frozen Puff Pastry is combined with delicious tomato pizza sauce, your choice of meat and vegetable toppings and finished with a golden mound of tasty cheese!

Perfect for when you want to make something to eat quickly, and a brilliant "emergency standby" dish for when unexpected guests turn up!

Try Chicken and Mushroom, Ham and Pineapple, Spinach and Crumbled Feta or any of your favorite pizza toppings!
