Cookies and Cream Mini Cheesecakes - RECIPE

375g of Cream Cheese (at room temperature)
1/3 Cup of Caster Sugar (Super Fine White Sugar)
2 Teaspoons of Vanilla Extract
1/2 Cup of Whipping Cream
2 Eggs
20 Oreo Cookies (or similar)

Preparation Time: About 15 minutes
Cooking Time: About 20 minutes (plus cooling and chilling time)
