Tomato Chilli Jam - RECIPE

Tomato Chilli Jam is a delicious home made preserve. Tomatoes are combined with garlic, ginger, sweet chilli sauce and sugar. Simmered until thick and reduced, this jam can be used as a condiment, marinade, baste or sauce - give it a go!

Olive Oil
2 Cloves of Crushed Garlic (about 2 Teaspoons)
1 Tablespoon of Freshly Grated Ginger
800g of Fresh Ripe Tomatoes (diced)
2/3 Cup of Sweet Chilli Sauce
1 Finely Chopped Red Chilli (optional)
1/2 Cup of Brown Sugar
Juice of 2 Limes

Lemon Curd (Lemon Butter)

Lemon Curd (or Lemon Butter) is an old-fashioned citrus preserve. Fresh lemon juice and butter are combined with eggs and sugar to create a deliciously smooth and rich Lemon Conserve. Use Lemon Curd to fill a Lemon Meringue Pie, a filling for a cake, as a spread for sandwiches or toast or as a topping for ice cream. Try it today - you'll love it!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

1/2 Cup of Lemon Juice
3/4 Cup of Caster Sugar (Fine White Sugar)
200g Butter (Unsalted)
3 Eggs (at Room Temperature)

MAKES 2 CUPS OF LEMON CURD

Preparation Time: 2 minutes
Cooking Time: 15 minutes

STORAGE:

Keep in an airtight container or sterilised jar. Store in the fridge, unopened, for up to 6 months - once opened, consume within 1 week.

TO MAKE MICROWAVE VERSION:

Place all ingredients in a microwave-safe bowl or jug. Cook on HIGH for about 6 minutes (depends on microwave) - stopping every minute to whisk mixture. Once mixture is smooth and thickened, place bowl in sink of cold water (as seen in video) and whisk until cool.
