Carrot Cake - RECIPE



Carrot Cake is a classic, cafe-style dessert. A moist, fluffy cake is smothered in a rich layer of vanilla cream cheese frosting. Easy enough to make at short notice and impressive enough to serve at any function - give it a go!

INGREDIENTS IN THIS DISH:

CAKE:

300g of Grated Carrots (about 4 small carrots)
1 1/2 Cups of Self Raising Flour
1/2 Teaspoon of Ground Cinnamon
3 Eggs
3/4 Cup of Brown Sugar
3/4 Cup of Vegetable Oil
1 Teaspoon of Vanilla Extract / Essence

FROSTING:

250g Cream Cheese (soft)
1/2 Cup of Icing Sugar (aka Powdered Sugar / Confectioners Sugar)
1 Teaspoon of Vanilla Extract / Essence


SERVES 6 - 8

Preparation Time: About 15 minutes
Cooking Time: About 1 hour

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
