Mango Chicken Salad | One Pot Chef

Mango Chicken Salad is a quick and easy to make salad dish that can be served as a side dish or a main meal. Mixed salad leaves are combined with fresh slices of mango, succulent chicken and a delicious tangy dressing. Great for sharing with friends on the weekend, or a quick meal during the week, this gorgeous salad is guaranteed to impress - give it a go!

INGREDIENT LIST:

100g of Mixed Salad Leaves
1/4 Cup of Lime Juice
1 Small Red Chilli (finely chopped)
1 Tablespoon of Coriander / Cilantro (Finely Chopped)
2 Teaspoons of Soy Sauce
2 Large Mangos (thinly sliced)
1/2 a Roasted Chicken  - about 2 cups (skin and bones removed, meat shredded)
Freshly Cracked Black Pepper (optional)

Preparation Time: About 15 minutes 


SERVES 4 (as a main meal - Serves 6 to 8 if used as a side dish)
