Chickpea Curry - RECIPE



Chickpea Curry is a wonderful vegetarian dish that can be served hot or cold, as a side dish or a main meal by itself. Chickpeas are combined with garlic, onion, tomato, herbs and spices and simmered until delicious and fragrant. Serve with rice or on it's own  - give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 x 400g Cans of Chickpeas (rinsed and drained)
1 Onion (finely chopped)
2 Cloves of Crushed Garlic
2 Large Tomatoes (chopped)
100g of Baby Spinach Leaves
1 1/2 Teaspoons of Ground Ginger
4 Teaspoons of Curry Powder
1 Teaspoon of Cumin
1 Teaspoon of Oregano
Salt and Pepper
1 Cup of Water

Preparation Time:  About 10 minutes
Cooking Time: About 15 minutes

SERVES 4
