Rock Cakes - RECIPE
Rock Cakes are an old-fashioned sweet treat. Flour and butter are combined with milk, egg and dried fruit to create a thick, sticky batter. Lovingly baked, the Rock Cakes are golden and crisp on the outside, and soft and moist on the inside - give it a go!

INGREDIENTS IN THIS DISH:
2 Cups of Self Raising Flour
1/3 Cup of Caster Sugar (Superfine White Sugar)
100g Butter
1/2 Teaspoon of Ground Cinnamon
3/4 Cup of Milk
1 Egg
1/2 Cup of Sultanas / Raisins
1/2 Cup of Chopped Dried Apricots
TIP: Use your favourite dried fruits instead of the ones indicated, if you prefer ;)
MAKES ABOUT 12 ROCK CAKES
Preparation Time: About 10 minutes
Cooking Time: About 15- 20 minutes per batch
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
