Creamy Red Lentil Curry (Vegan / Dairy Free / Gluten Free) | One Pot Chef



Creamy Red Lentil Curry is a Vegan friendly, Dairy Free and Gluten Free main dish, perfect for Meat Free Monday. Onion and garlic are combined with red lentils and a variety of spices along with tomato and coconut milk. Simmered gently, this creamy curry is great served over rice, with mixed vegetables or just by itself - Try it today :)

Ingredients:

1 Teaspoon of Vegetable Oil
1 Brown Onion (peeled and diced)
4 Cloves of Garlic (minced, about 4 teaspoons)
1 Teaspoon of Mild Mustard (I used Dijon)
1 Teaspoon of Turmeric
1/2 Teaspoon of Ground Coriander
1 Teaspoon of Cumin
1 Teaspoon of Mild Curry Powder
Salt
2/3 Cup of Tomato Paste
400ml Can of Coconut Cream
1 Cup of Dry Uncooked Lentils (rinsed)
3 Cups of Boiling Water
Mint (to garnish, optional)

NOTE: When cooking for people with Gluten Intolerance, ALWAYS check the packaging of ALL ingredients to confirm they are Gluten Free before you start cooking. 

Preparation Time: About 10 minutes 
Cooking Time: About 55 minutes

Slow Cooked Vegetable Curry | One Pot Chef

Slow Cooked Vegetable Curry is a hearty, flavour packed main meal dish that is vegetarian and vegan friendly. Featuring all your favourites including sweet potato, cauliflower, onion, garlic, ginger, coconut milk and a delicious mix of herbs and spices that is guaranteed to keep everyone happy - give it a go!

INGREDIENT LIST:

600g of Sweet Potato (peeled and diced into 1cm pieces)
400g of Cauliflower (about 1/2 a small head - cut into florets)
1 Small Brown Onion (diced)
2 Teaspoons of Minced Garlic
2 Teaspoons of Minced Ginger
1/4 Cup of Mild Curry Paste (I used Korma Paste)
2 x 400g Cans of Chickpeas (drained)
400g Can of Diced Tomatoes
1 3/4 Cups of Vegetable Stock
50g of Baby Spinach Leaves
1/2 Cup of Coconut Milk
Salt and Pepper
Vegetable Oil
Rice (to serve)

NOTE: This is a MILD curry. To heat things up, use a hotter curry paste or add additional spices to suit your personal taste ;)

Preparation Time: About 20 minutes 
Cooking Time: 4 hours on HIGH setting or 6 - 8 hours on LOW setting

Easy Veggie Burgers - RECIPE



Easy Veggie Burgers are a wonderful meat-free main meal that everyone will love. Chickpeas are combined with carrot, garlic, mushrooms, herbs and spices. Formed into patties and fried until golden and crisp, these burgers are not only delicious, but very healthy - give it a go!

3-4 Button Mushrooms (finely diced)
1/4 Cup of Sliced Sundried Tomatoes
1 Clove of Garlic (crushed)
Salt and Pepper
1 Teaspoon of Ground Coriander
1/2 Teaspoon of Mild Paprika
2 Eggs
1 Cup of Dry Breadcrumbs
Bread Rolls and Salad (to serve)


Preparation Time:  About 15 minutes
Cooking Time: About 10 minutes

Chickpea Curry - RECIPE



Chickpea Curry is a wonderful vegetarian dish that can be served hot or cold, as a side dish or a main meal by itself. Chickpeas are combined with garlic, onion, tomato, herbs and spices and simmered until delicious and fragrant. Serve with rice or on it's own  - give it a go!
