Tuna and Avocado Quesadillas | One Pot Chef



ONE POT CHEF COOKBOOKS - PAPERBACKS AND EBOOKS:

Tuna and Avocado Quesadillas is a delicious lunchtime treat, inspired by the classic Mexican dish. Tortillas are sandwiched together with mashed avocado, tuna, baby spinach and cheese. Pan fried until crisp and golden, these quesadillas are quick to make and easy to adapt to suit any taste preference - give it a go!

8 Tortillas
1 Large Avocado
2 Tablespoons of Lemon Juice
Salt
400g Can of Tuna (drained and flaked)
50g of Baby Spinach Leaves
1 Cup of Grated Cheddar Cheese (or cheese of your choice)

Preparation Time: About 5 minutes 
Cooking Time: About 15 minutes

MAKES 4 (serves about 4 to 6 people)

Avocado Egg Rolls - RECIPE



Avocado Egg Rolls are one of The Cheesecake Factory's most beloved appetizers. Avocado, Sundried Tomatoes, Coriander, Onion and spices are combined and enveloped in a light pastry. Deep fried until golden and crisp, these gorgeous little morsels are perfect on their own or with your favorite dipping sauce - give it a go!

1 - 2 Cloves of Garlic (crushed)
Salt and Pepper
1 Egg (lightly beaten)
Egg Roll (Spring Roll) Pastry Wrappers


Preparation Time:  About 10 minutes
Cooking Time: About 2 -3 minutes per batch


MAKES ABOUT 30 SMALL EGG ROLLS OR ABOUT 15 - 20 LARGE EGG ROLLS

Creamy Chicken Pesto Pasta - RECIPE



Creamy Chicken Pesto Pasta is a delicious main meal based on a dish I tried on a recent visit to Brisbane. A delicious home made pesto sauce is combined with succulent chicken breast pieces and freshly chopped avocado. The combination is simply divine - give it a go!

1 Bunch of Basil Leaves (about 2 firmly packed Cups)
2 Chicken Breast Fillets (chopped into chunks)
2 Tablespoons of Cream
500g of Pasta (cooked as per packet directions)

OPTIONAL:
1/2 an Avocado (diced)


Preparation Time:  About 10 minutes
Cooking Time: About 15 minutes
