Pineapple Upside Down Cake - RECIPE

Pineapple Upside Down Cake is a retro classic dessert. Pineapple rings are layered on brown sugar and melted butter, then covered in cake batter. Baked until golden, the cake is inverted on a plate to reveal the glorious hidden glazed and caramelised pineapple! Bring this 1980’s favourite back to your family, they’ll love it - give it a go!

400g Can of Pineapple Rings (7 rings)
1/2 Cup of Brown Sugar
75g of Butter (melted)
150g of Butter (at room temperature)
2 Eggs
2 Cups of Self Raising Flour
3/4 Cup of Caster Sugar (Super Fine White Sugar)
1/2 Cup of Milk
2 Teaspoons of Vanilla Extract
