Cheesy Polenta - RECIPE
Cheesy Polenta is a delicious mashed potato substitute that is very simple to make. Chicken stock and water are combined with polenta (corn meal) and cooked until thick and fluffy. Mixed with cream cheese and freshly grated parmesan cheese, this amazing side dish is the work of minutes - give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:
2 Cups of Chicken Stock (or Vegetable Stock)
2 Cups of Water
2 Cups of Polenta (Corn Meal)
125g of Cream Cheese (at room temperature)
1 Cup of Freshly Grated Parmesan Cheese
Salt and Pepper (to season)
NOTE: If you would prefer a softer polenta (like whipped mashed potato) use 3 cups of Chicken Stock instead of 2 ;)
Preparation Time: About 5 minutes
Cooking Time: About 15 minutes
SERVES 4 - 6 (as a side dish)
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
