Chocolate Raspberry Pavlova - RECIPE



Chocolate Raspberry Pavlova is an impressive dessert that is quite simple to make. A large, crisp chocolate meringue with a soft centre is smothered with freshly whipped cream, raspberry sauce and fresh fruit. Perfect for feeding a crowd for any occasion - give it a go!

INGREDIENTS IN THIS DISH:

6 Egg Whites
1 1/2 Cups of Caster Sugar (Super Fine White Sugar)
2 Teaspoons of Vanilla Extract
2 Teaspoons of Cornflour (Corn Starch)
1 Teaspoon of White Vinegar
1/4 Cup of Cocoa Powder
50g of Milk Chocolate (finely grated)
125g of Raspberries (plus extra to decorate)
1 Tablespoon of Icing Sugar (Powdered Sugar)
600ml of Thickened Cream (or any cream suitable for whipping)

Preparation Time:  About 20 minutes
Cooking Time: About 1 hour 15 minutes + cooling time

Lemon Meringue Pie - RECIPE



Lemon Meringue Pie is a delicious dessert that is not only cheap and easy to make, but very impressive! A crushed cookie base is smothered with a tangy lemon filling, then covered with a mound of glossy white meringue. Lightly baked until golden, this dish will be a smash hit with everyone - give it a go!

125g Butter (melted)

Filling:

1 Cup of Castor Sugar (Super Fine White Sugar)
1/2 Cup of Corn Flour (Corn Starch)
1/2 Cup of Lemon Juice (125ml)
1 Cup of Water
50g Butter (chopped)
3 Egg Yolks

Topping:

3 Egg Whites
1/2 Cup of Castor Sugar

Preparation Time:  15 minutes + Chilling Time
Cooking Time:  About 10 minutes

SERVES 10

Lemon Curd (Lemon Butter)

Lemon Curd (or Lemon Butter) is an old-fashioned citrus preserve. Fresh lemon juice and butter are combined with eggs and sugar to create a deliciously smooth and rich Lemon Conserve. Use Lemon Curd to fill a Lemon Meringue Pie, a filling for a cake, as a spread for sandwiches or toast or as a topping for ice cream. Try it today - you'll love it!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

1/2 Cup of Lemon Juice
3/4 Cup of Caster Sugar (Fine White Sugar)
200g Butter (Unsalted)
3 Eggs (at Room Temperature)

MAKES 2 CUPS OF LEMON CURD

Preparation Time: 2 minutes
Cooking Time: 15 minutes

STORAGE:

Keep in an airtight container or sterilised jar. Store in the fridge, unopened, for up to 6 months - once opened, consume within 1 week.

TO MAKE MICROWAVE VERSION:

Place all ingredients in a microwave-safe bowl or jug. Cook on HIGH for about 6 minutes (depends on microwave) - stopping every minute to whisk mixture. Once mixture is smooth and thickened, place bowl in sink of cold water (as seen in video) and whisk until cool.
