Mini Pumpkin Pies | One Pot Chef

My Mini Pumpkin Pies are the bite-sized treat that everyone will love this coming Thanksgiving! Pumpkin is combined with cream cheese, eggs, vanilla, sugar and those all important pumpkin pie spices then baked in a pastry base. Served with whipped cream, ice cream or just by themselves, these little babies will be snapped up in seconds - give it a go!

INGREDIENT LIST:

1 Cup of Cooked Mashed Pumpkin (or canned pumpkin)
250g of Cream Cheese (at room temperature)
1/2 Cup of White Sugar
1 Teaspoon of Vanilla Extract
3 Eggs
1 Teaspoon of Pumpkin Pie Spices (or Mixed Spice)
2 - 3 Sheets of Frozen Ready Rolled Shortcrust or Pie Crust Pastry (thawed)
Spray Oil

Preparation Time: About 15 minutes
Cooking Time: About 20 minutes

MAKES 12 - 18 (depending on size)

All measurements and temperatures are in Australian Metric.
