One Pan Mexican Rice - RECIPE

One Pan Mexican Rice is a quick and easy dish, perfect for serving on Taco Tuesday! Chicken is pan fried with red bell peppers, red onion, cooked rice and taco seasoning. Simmered for a few minutes, this super fast dish is easily adapted and suitable for the entire family - give it a go!

500g of Chicken Breast Fillets
1 Red Onion
2 Red Capsicums (Bell Peppers)
Olive Oil
3 Cups of Cold Cooked Rice (preferably day old)
35g Sachet of Powdered Taco Seasoning
1 1/2 Cups of Water


Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

SERVES  4 - 6
