Slow Cooker Cheese and Bacon Potatoes | One Pot Chef



Slow Cooker Cheese and Bacon Potatoes is a fabulous crock pot side dish, perfect for serving with a wide variety of dishes. Baby Potatoes are combined with onion, garlic, bacon and cheese, then slow cooked until tender. Served warm, these delicious potatoes are guaranteed to keep everyone happy - Try it today :)

Ingredients:

10 Baby Potatoes (quartered)
1 Small Brown Onion (finely chopped)
4 Slices of Short Cut Bacon (diced)
1 Tablespoon of Mixed Dried Herbs (I used Italian Herb Mix)
2 Cloves of Garlic (crushed)
1 Cup of Grated Cheese (I used Cheddar)
2 Tablespoons of Olive Oil
Salt and Pepper
1 Spring Onion (for garnish, sliced)

Preparation Time: About 15 minutes 
Cooking Time: About 6 to 8 hours on AUTO setting (1hr on HIGH, then LOW for the rest of the cooking time)

SERVES 4 - 6 (as a side dish)

Lemon Cream Cheese Brownies | One Pot Chef



Lemon Cream Cheese Brownies are a super citrus sweet treat, guaranteed to bring a little sunshine into your life! Butter, sugar and cream cheese is combined with flour and lemon juice. Baked then topped with a sweet lemon icing, these bright yellow brownies are just what you need on a gloomy day - give it a try today!

Ingredients:

125g of Unsalted Butter (at room temperature)
200g of Philadelphia Style Cream Cheese (at room temperature)
3/4 Cup of White Sugar
2 Eggs
3/4 Cup of Plain All Purpose Flour
3 Tablespoons of Freshly Squeezed Lemon Juice
3 to 4 Drops of Yellow Food Colouring (optional)

Icing:

1 Cup of Icing Sugar (sifted)
3 Tablespoons of Lemon Juice
Freshly Grated Lemon Zest

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

MAKES 9 - 16 SQUARES (depending on how big you slice them)

Cheater’s Mini Apple Pies | One Pot Chef



Cheater’s Mini Apple Pies is a no-fuss, simplified version of the classic dessert! Pie apples are combined with brown sugar and cinnamon, then baked in an envelope of puff pastry. Topped with cinnamon sugar, these gorgeous little pies can be served hot or cold, or even frozen for later use - give it a try today!

Ingredients:

3 Sheets of Frozen Ready Rolled Puff Pastry (thawed)
800g Can of Pie Apples
1/4 Cup of Brown Sugar
1 Teaspoon of Ground Cinnamon
1 Egg
2 Tablespoons of Cinnamon Sugar

Preparation Time: About 10 minutes
Cooking Time: About 20 - 25 minutes

Pulled Chicken Mini Tacos | One Pot Chef



My Pulled Chicken Mini Tacos are quick to make, bursting with flavour and perfect for serving as party food, as part of a snack platter or for good old fashioned Taco Tuesday! Tender Pulled Chicken, cooked in tomato, honey and smoked paprika is served on soft or hard taco shells with your choice of toppings. So delicious, you’ll want to make these all the time - Try it today :)

Ingredients:

1kg of Chicken Thigh Fillets 
1 Tablespoon of Tomato Paste
2 Tablespoons of Honey
1 Tablespoons of Smoked Paprika
1 Clove of Garlic (finely chopped or minced)
Salt
1 1/2 Cups of Water
Taco Shells (I used soft and hard “stand and stuff” mini taco shells)
Toppings of your choice (I used guacamole, sour cream, tomato and coriander)

Preparation Time: About 10 minutes 
Cooking Time: About 50 minutes
